Zuppa Toscana


My Friend Kelly B. Shared this recipe with me a few years ago. I really should make it more often ! So yummy. A taste of Olive garden at home !

Zuppa Toscana

WW PT + 10 ( per 3/4 Cup)

1lb. Ground Italian Sausage (mild) cooked and drained.
1 small diced onion
2 tsp. minced garlic
4 Slices thin crispy bacon
6 Cps. Chicken Broth
4 medium potatoes cubed skin on ( I remove it unless I use reds)
2 tsp. Pepper
2 Cps Chopped Chard, Kale or Spinich ( I use 4 cups)
1/2 Cp. half & Half

Brown and drain your sausage and set aside. In soup pot saute' your onion just until soft then add bacon and garlic saute an addition 3 to 4 minutes.
Add you sausage, 6 cups of Chicken broth and potato's bring to a boil and cook until potatoes are just done reduce heat to low. add pepper and chopped Chard,kale or spinach cook until wilted.
Add half and half. Let simmer about 20 minutes. Serve hot with garlic bread !

Leese's Clam Medley


So I just threw this together cause I was craving clams lol

Leese's Clam Medley
Serves 2
8 pts with 4oz pasta

1 Can Fancy Baby Clams
1/2 Yellow Bell Pepper (Diced)
8 Grape Tomatoes (Cut in half)
3/4 Cp. Sliced fresh button mushrooms
1/4 Cp. Chopped Fresh Parsley
Salt and Pepper to taste
Garlic to taste
8 0z. Angel Hair pasta
1 Tbl. EVOO


In a pot cook pasta as directed.
Meanwhile Add Peppers and Tomatoes to skillet with 1 Tbl EVOO saute about 5 minutes. Add Mushrooms, salt,Pepper and garlic and 1/4 of the juice from clams. Cook until all is soft.

Drain Pasta and pour remaining clam juice over pasta and drain.

Once Clam mixture has heated through Serve over 4oz. pasta.

Leese's Prosciutto Chicken


OH MY GOODNESS THIS WAS GOOD !

Leese's Prosciutto Chicken

1 Bonless skinless Chicken breast (filleted in half)
1 oz. Thinly Sliced Prosciutto
1/2 Oz Fat Free Feta Cheese Crumbles
Sea Salt and Pepper to taste


Season the Chicken with sea salt and pepper, Wrap in prosciutto slices and top with Feta Cheese.
Bake at 350 for 15 to 20 minutes.

Chicken Gumbo


This is a Weight Watcher Friendly Recipe.
2 Cups = 6 Pts.


Chicken Gumbo

16oz. Chicken skinless cooked and shredded.
2 Tsp. Olive oil
8 Cps. Water
1 Cp. Yellow Onion Chopped
2 Cp. Diced Tomatoes (canned)
1 1/2 Cps. Corn (frozen)
2 Cps. Sliced okra (frozen I double the okra :)
2 Cloves Garlic
1/2 Tsp. Red Pepper Flakes
1/2 Tsp. Dried Sage
1/2 Cp. Barley

Brown onion in the oil (in your soup pot) Add all ingredients except barley.
Bring to a boil. Add barley and simmer for 1 hours string occasionally.

Carolyn's Crustless Quiche


My Mother in Law's recipe. LOVE IT


Carolyn's Crustless Quiche

2 Cps. Any Cheese
1/2 Cp. Cooked meat ( Any, I love it with sausage)
5 Eggs
3/4 Cp. Milk
1/4 tsp. Dried Basil

Mix eggs & milk. Pour into a 9 inch pie plate. Add cheese, basil and meat.

Cook @400 for 20-25 Minutes or until knife in center comes out clean.

Leese's Halibut Patties


These were surprisingly YUMMY


Halibut Patties

6 to 8 oz. Halibut (cooked and shredded)
1 Small Onion Chopped
1/2 cup Chopped Red Bell Pepper
1/4 tsp Crushed Red Pepper Flakes * want it hotter? add more
1 tsp.Tony's seasoning ( or salt and pepper to taste)
1 Egg
1/2 to 3/4 cup bread crumbs (unseasoned)
If to dry add a tiny bit of milk

mix with hands well.

In frying pan put a thin layer of olive oil. Make 5 to 6 patties from your mixture above. Fry approximately 5 minutes each side or until golden brown. Serve with Grits and eggs. YUM O

Leese's Curry /Indian seasoning Scallops


MM MM MMM these were so yummy

1/2 Lb Sea Scallops
1/2 Tsp Curry
Spray I Can't believe it's not butter
Pam Olive oil spray

Wash Scallops under cold water. Spray Skillet with Pam olive oil Heat to medium heat. spray one side of scallops with butter and season with both seasonings. You can add more to your taste. Place them in the skillet seasoned side down. Butter and season other side.
Cook about 3 to 4 minutes on each side depending on the size of your scallop.

NOTE: Scallops are NEVER all the same size! Do not be fooled. They also have a really strong marshy smell. so if your scallops are all one size and have no smell then you are probably getting skate meat cut out with a tool or possibly shark meat.

FIGS DECADENT FIGS


Pint of fresh Figs
2 packages of prosciutto
Gorgonzola Cheese crumbles

Preheat oven to 325
Wash figs and cut off stem. Make a cut in the fig about half way through.
Stuff fig with 1/2 tsp to 1 Tsp of Gorgonzola. Wrap fig in prosciutto.
Place all on baking pan. Bake approximately 15 minutes.

These are super rich I bet money you can't eat more than 2.
Also try blue cheese !

Lemon Pepper Halibut (Leese's)


Served with Roasted Brussels and Sauted Arugula

2 5oz Halibut fillets
Lemon Pepper seasoning or pepper with lemon juice
3 Tbl. Olive Oil

Season Fillets and sear about 5 minutes on each side in frying pan with the olive oil.

BRUSSELS & ARUGULA

Spary brussels with olive oil and season with your favorite seasoning
heat over to 375 and roast till brown (about 15 minutes).

After Halibut is done remove from pan. Toss arugula in the same pan add a sprinkle of Rice Vinegar. Don't over cook.

Baked Walnut Salmon (Leese's)


Served with Blue Cheese Salad and Parmesan Couscous.

2 5oz Salmon steaks (skinned)
1/2 cup chopped Walnuts
3/4 Cp. Bourbon Glaze (Tastefully Simple)
Salt and Pepper

Preheat oven @ 350
Pat dry salmon steaks
Salt and pepper to taste the more pepper the better :)
Place steaks in a shallow baking dish. Pour half of the bourbon glaze over fish. Bake @ 350 about 15 to 20 minutes DO NOT OVER COOK.
At last 5 minutes sprinkle walnuts on top of steaks.
When done drizzle the remaining glaze over steaks and serve immediately.
